This is so funny! And the fact that you've never thought of an egg on a burger is so strange. Growing up in Braga, Portugal, our favourite place had these great burgers. This big gray haired guy who wasn't very nice managed to put everything between those two huge slices of bread, including a fried egg. Gongratulations Molly and Matthew!

I love this! I kept checking the clock today waiting for the announcement and it ended up being so so worth it. Braised kale and fried eggs are one of my favorite things ever and it's all I can think about tonight. Congrats on the new project!

Our chickens are totally on strike right now. We have 20 and are lucky to get one a day at the moment, sigh ... listening to the lovely sizzle makes me impatient for longer days and more eggs!
I do the little cheater over easy for 5 seconds for no ewwww white....
I have made unsweetened pancakes just to put a fried egg on top.
You can force chickens into laying if you keep a light in their pen, but not too natural.

Thanks for a wonderful podcast, Molly and Matthew! We can't get eggs at our local farmer's market, as far as I know. (I haven't been in over a year due to work constraints) I have had eggs like you described, which we got from a natural food store when we were visiting Valparaiso this summer.
Also, I have had eggs on my burgers before. I think Denny's used to serve something like that... but Red Robin has it on their menu (The Royal, I believe it's called). Our family eats bacon and eggs every morning for breakfast. My favorite way is over-easy with sliced avocado and Tabasco sauce.

Btw: @Madhungrylsq's new book has a great tip for a perfect fried egg. After you put the butter + egg in a small pan, add a tsp of water; cover for one minute. It steams the top of the egg while cooking it from the bottom. Works every time. Not sure it passes the snowy white bottom test though...
Fun podcast! Lately, my go-to quick dinner has been fried egg, cheddar, lettuce and sriracha folded in a pan-fried tortilla. It's simple but yummmmmm.

Great podcast! I really enjoyed it, even though I only heard the first third or so due to technical difficulties (some other podcast cut in at that point and nearly drowned out your voices). It also helped me decide what to have for breakfast today - a tortilla wrap with a fried egg, rice, hot sauce, and mayo. Delicious!

Congratulations on your new project! My only complaint is that now I'm completely neurotic about fried eggs. I threw away 3 of them the other day, because they lacked a "snowy white bottom". I keep thinking, "Is this egg good enough for Molly and Matthew?"

We rented "Julie and Julia" this weekend and my kids laughed at the scene where Julie stated that she didn't like eggs and had never eaten one, because that's me. I only eat eggs if they are in a cake. But I loved the podcast anyway!

I'm a huge fan of fried egg sandwiches - good soft white roll, butter, egg (crispy bottom), sea salt. Optional extras ketchup, bacon, sausage, black pudding, mushrooms, all of the above... Can't wait for the next instalment.
Harriet, raw eggs are much safer than raw chicken. According to the CDC, fewer than 1% (really, MUCH less, but let's say 1% to be conservative) of eggs are infected with salmonella. Consumer Reports typically finds that over 66% of chicken is infected with salmonella or campylobacter. Furthermore, a partially cooked egg is safer than a raw egg, and if you keep the exterior of the shell away from the egg, that lowers the risk further. (Molly taught me that last part!)
So unless you're in a high-risk category (pregnant, elderly, baby, immunocompromised), I say go for the runny yolk.
Fun podcast! Love the sound of the sizzling egg. I would recommend bringing the cooking bit up to the front of the podcast - it's more enticing to hear the stories/commentary while you're cooking. Fried eggs for dinner tonight!

Fantastic. I'm glad to know I'm not the only person who could live with fried eggs for every meal!
As for poached eggs the answer is Julia Child. Use a pin to poke a hole in the bottom of your egg. Boil for exactly 10 seconds. Remove. Add vinegar to your already boiling water. Crack your eggs in and cook for 4 minutes. Rinse your eggs when they are done cooking, pat them dry and voila! Nothing is easier.
Matthew, thanks so much for your answer to my "runny yolk" question above. Sadly I do fall into the "high risk" category since I'm 65 (though don't feel "elderly") so I guess I'll stick to pasteurized eggs if I want a runny yolk. Once again...your podcast with Molly is a hoot and wonderful!

FoodTherapy-I think any kind of vinegar. I use white but my sister uses apple cider. If you rinse your egg in clean water after its done poaching it should take care of the vinegar taste. Also drying it off it an important step. Good luck!
