    I’ll admit it, I hate the consistently bad quality of garlic bulbs at my grocery store, and I’m also in an area of the Midwest that doesn’t feature much local/fresh anything for a big part of the year, so I buy the big jar of a specific brand of pre-peeled, pre-minced (California) garlic for the majority of my cooking. Generally, I like a large amount of garlic in savory dishes (2-3 Tablespoons where the recipe calls for one or two cloves), so in my household, we use a whole jar in a month or two. A Chinese woman I know taught me this highly-addictive recipe for a “sauce”/topping that I use on anything stir-fried, and sometimes just atop plain rice with some tofu cubes: A hearty scoop of minced garlic, an equally hearty scoop of dried chili flakes (any Asian variety) or your standard spice-cabinet crushed red pepper flakes, a scoop of sesame seeds (raw or toasted), a little oil (mild or strongly flavored), some minced scallions, and a splash or two of soy sauce. This is particularly good if you microwave it briefly to “bloom” the garlic and chili flakes. Warning: This will give you garlic breath of death, but it’s totally worth it.

    H Mart in Lakewood, WA turned my mother on to pickled garlic and so now she buys those pre-peeled buckets of garlic from them and pickles the entire container. She swears pickled garlic is the best thing ever…

    I agree with June2. Pickled garlic is some of the greatest foods I’ve ever encountered. I love to grate some on my pizza after it comes out of the oven. DELICIOUS!!

    When I was looking into what garlic I wanted to plant in my garden, I learned that the two different types grow better in different climates. There’s overlap, but there is a preference.
