    Hey guys! I am gluten intolerant, so my cookie dough would not have wheat. I was wondering if I should still try letting my dough sit. I have never heard of that before but it sounds awesome. Let me know what you think! Thank you!

      Hey, Marin, sorry it took me so long to respond. I’m not experienced with gluten-free baking, but I think it definitely couldn’t hurt to age the dough. It’s not about gluten formation but hydration, which is an issue with all sorts of flours.

      Hey Marin! I’m a gluten free recipe developer, and yes, aging a gluten free dough will make your cookie better! I also suggest using buckwheat in your flour blend – it marries well with chocolate and brown sugar and gets the caramelly flavor that Molly mentioned.

    While all the nerds in my family are excited to try the aged cookie versus non-aged cookie experiment “in the name of science”, I was warned that any dough found in the fridge may or may not be eaten on the spot. Sounds like I’m in the market for a chastity padlock.
